Sodium Acid Pyrophosphate is an organic compound which appears as a fine white coloured powder with an excellent water solubility. This chemical consist of cations of sodium and anions of pyrophosphate. Its chemical formula is Na2H2P2O7 and having an average molecular weight of 221.94 grams per mol. The aqueous solution of Sodium Acid Pyrophosphate has a potential of hydrogen value in between 3.7 to 5 which make it acidic in nature. It can be used in various food processing applications, leather treatment, dispersant ion oils and as a stabilizing agent against reduction.
